If you recognize this dessert, congratulations—you’ve spotted a classic!

Although it may be hard to believe, I first shared this fruit cake recipe back in 2013. It has been a holiday tradition in my family for as long as I can remember. Christmas wouldn’t be complete without a few slices of my mom’s legendary fruit cake!

Over the years, this recipe has grown in popularity, becoming one of the most beloved holiday recipes on A Beautiful Plate.

For anyone who’s hesitant about fruit cake, I promise this is the exception. This is, hands down, the best fruit cake I’ve ever enjoyed.

Why This Fruit Cake Stands Out

Over the years, I’ve worked with All-Clad to update this family recipe, now featuring their Pro-Release Bakeware Set and Silicone Tools—perfect for hassle-free holiday baking.

The All-Clad Pro-Release Loaf Pan has oversized handles and a nonstick finish, making it ideal for this dense, fruit-packed cake. You won’t need to grease the pan or line it with parchment; the cake just slides right out.

If you’re looking for high-quality bakeware, the full All-Clad Pro-Release set is worth checking out. Pair it with their silicone spatulas and baking tools for durable, versatile, and easy-to-use equipment.

Ingredients for the Best Fruit Cake

The magic of this cake lies in its fruit. We use only unsweetened dried fruits and fresh additions:

Golden raisins, dark raisins, figs, prunes, cherries, apricots, and peaches.

Orange and lemon zest.

Freshly grated Granny Smith apple.

Slivered almonds.

Crystallized ginger for a subtle kick.

Optional: Some like adding bittersweet chocolate for extra indulgence.

Preparing the Fruit

The day before baking, soak your dried fruit in dark rum for at least 12 hours (up to 24). This step hydrates the fruit, infuses it with flavor, and ensures it stays moist in the final cake.

Mixing the Batter

Once your fruit is plump and aromatic, fold it gently into the cake batter. Add your zest, apple, nuts, and ginger, mixing evenly.

Divide the batter between two loaf pans and bake at a low temperature for about 90 minutes. If you’re using the All-Clad Pro-Release pans, there’s no need for greasing or lining! Allow the cakes to cool completely in the pans before removing.

Optional Glaze & Toppings

Top the cooled fruit cake with whole pecans or a thin apricot glaze for a festive, polished finish.

Storing & Aging Your Fruit Cake

Wrap the cooled cakes in cheesecloth soaked in medium sherry or triple sec. This adds extra moisture and allows flavors to deepen.

While you can serve the cake after a few days, it’s ideal to let it rest for at least a week to develop its full flavor. Re-soak the cheesecloth weekly to keep the cake moist. Stored properly, the fruit cake can last 6–8 weeks in the fridge.

Common Questions

Can I start baking in advance?
Yes! The sooner you make it, the more the flavors improve.

Can I swap the dried fruits?
Feel free to adjust, but measure by weight to maintain balance.

Can I skip the alcohol?
You can soak the fruit in orange juice, apple juice, or even tea. The cake will be slightly less rich and won’t store as long.

How many servings does it make?
This recipe makes two loaf cakes. A single loaf goes a long way because it’s dense and rich. Serve in thin slices or cut them in half.

Can I bake in other pans?
Loaf pans are recommended, though bundt or tube pans can work. Baking times may vary, so keep an eye on the cake.
