In another bowl, whisk the egg whites with a pinch of salt until they form stiff peaks. Carefully fold the whipped egg whites into the mascarpone mixture using gentle motions from bottom to top to maintain airiness.
Begin assembling the dessert by spreading a thin layer of mascarpone cream at the bottom of a dish. Quickly dip each ladyfinger into the cooled coffee for just a second, then arrange them in a single layer over the cream.
Spread a layer of mascarpone mixture on top, then repeat the process with another layer of soaked ladyfingers. Continue layering until all ingredients are used, making sure the final layer is cream.
Finishing and Resting the Dessert
Once assembled, dust the top generously with unsweetened cocoa powder. Place the tiramisu in the refrigerator to rest for at least five hours, although longer chilling improves texture and flavor development.
It can also be prepared the day before serving. However, it is best not to leave it too long before eating, as the ladyfingers will continue to soften over time.
